Breakfast Sandwiches for Two
2 English Muffins (homemade or store bought), or biscuits as the picture suggests
Pesto (any kind, homemade or store bought)
2 slices sharp cheddar cheese
Pre-heat skillet, with two well buttered English muffin rings, over medium heat. Add eggs, cheese, and pesto. Cover pan, lower heat to low, and cook until egg whites are firm and the cheese melts (about 5 minutes). Loosen eggs from rings with a knife and remove rings. Place on toasted English muffins or biscuits.
We dream in breakfast food—nightmares of oatmeal, eggs erotic in omelets or over easy, dry toast that crumbles upon waking, in our dreams it is always morning. You make the bed and I make the coffee, black for you, cool with cream for me. On Sundays we wait, tease out the beverage, roll hungry into afternoon. And then we feast– sweet and savory, syrup licking up against meat, Champagne and orange juice, biscuits and gravy. I know when the meal is over you will leave me, go back to your lunchtime children, your dinnertime wife. I am your euphemism, your ‘weekend graveyard shift’, the overtime hours that never call your house, or drive by in the middle of the week just to see what the other meals look like. No I never do that, I’m too busy dreaming of breakfast.
