The chicken: crisp flavorful skin, tender fall off the bone meat. The red cabbage: bright, cheery, and full of antioxidants- like a velvet painting of a sunset if velvet paintings were tangy tasty. Three minutes of prep. Paleo, if that’s your thing. Simple and easy and ready in 40 minutes, if that’s your thing.I had big plans yesterday. Big plans that crashed and burned. The burning was more of a charring, no flames but things did not go as planned. After the first failure, a failure I am being deliberately obtuse about, I was unwilling to attempt the soufflés I had planned. And then, as happens, it was time to make dinner. Seems people around here still want to eat, every single day, no matter what sort of mood I’m in.
I had the plate as pictured, chicken and cabbage, totally satisfying without being heavy. I gave Dad and the Mister some black beans and quinoa as well.

Paleo Baked Chicken Drumsticks
Serves: 9 drumsticks
Ingredients:
- 9 Chicken drumsticks
- ¼ cup coconut flour
- 1 tsp kosher salt
- ¼ tsp cayenne
- ¼ tsp smoked paprika
- ½ tsp garlic powder
- ¼ tsp black pepper
- or alternately 2 teaspoons of your favorite spice mix.
Instructions:
- Preheat oven to 450.
- Line a cookie sheet with parchment or foil. Top with a baking rack.
- Pat drumsticks dry with paper towels. Mix coconut flour with spices. Coat drumsticks with coconut flour mixture. Place on baking rack at least a few inches apart. You can do this step up to an hour ahead of time, refrigerating the chicken uncovered until ready to bake.
- Cook 35-40 minutes, until juices run clear and skin is crispy and dark golden brown. Let rest for 10 minutes before serving.
Braised Red Cabbage
I added a splash of balsamic vinegar after finding this recipe from Chef Shane Kelly online.
Ingredients:
- 1/2 medium head red cabbage – cored and sliced
- ½ red onion sliced
- 1 tablespoon olive oil
- ¼ teaspoon sea salt and more to taste at end of cooking
- fresh ground pepper
- squeeze of fresh lemon juice
- 1-3 teaspoons balsamic vinegar
Instructions:
- Preheat a large sauté pan or cast iron skillet over medium low heat, add the oil, and then add the sliced cabbage.
- Add salt ,pepper and lemon juice. Cook 20-25 minutes stirring every few minutes.
- Add balsamic vinegar, stir well to coat all the sliced cabbage, and cook for another 5 minutes.
- Season with more salt and pepper to taste.
