Jalapeño Lime Simple Syrup to spice up your life or, at the very least, your drink. Subtly sweet citrus simple syrup with just a bit of heat, this won’t punch you in the face with hot but may give a playful slap. No red mark. Use it to make an easy tequila cocktail or in a margarita. You can also add it to taste to sparkling water for an inexpensive alternative to those fancy gourmet sodas. With summer approaching I’ve got a slew of flavored syrups planned.
One of the perks for me was being able to use a jalapeño and a lime just slightly past their prime. The jalapeño had begun to soften and shrivel at the tip and the lime’s peel had hardened but it was still fresh on the inside—pretty doesn’t matter if you are going to boil and strain. It’s like broth for cocktails, using up the ends and bits to create a base for a pitcher of delicious later on.
Jalapeño Lime Simple Syrup
ingredients
- One jalapeño roughly chopped, no stems- about eight pieces
- One lime cut into quarters or eighths
- One cup water
- ½ cup sugar
- A pinch of salt
instructions
- Combine all ingredients in a non reactive sauce pan.
- Bring to a boil and then lower heat and simmer uncovered for another 45 minutes to an hour swirling or stirring occasionally
- Allow to cool
- Strain into a clean glass jar
- Will keep in the refrigerator for several weeks
Jalapeño Lime Tequila Cocktail
instructions
To make the Jalapeño Lime Tequila cocktail just shake one part simple syrup and two parts tequila of choice over ice with about a tablespoon of fresh squeezed lemon or lime juice (you could add a splash of orange liqueur as well to make it more of a margarita). Serve up or on the rocks with a lime garnish.

This is great! I can really use this simple syrup when I want a cocktail to warm me up from the inside.
Now that’s my kinda drink! I’m always a fan of spicing it up a little.
This mixes really well with cucumber vodka. The cool flavor of the cucumber vodka contrasts the heat of the jalapeno, the tartness of the lime and the sweetness of the sugar to create a perfect balance. I added many more jalapenos for more heat.
