Mango Mule Cocktail
The classic Moscow Mule goes tropical with fresh mango infused vodka (copper cup optional).
If you are like me you buy a mango at the store and then realize a week later that you still haven’t eaten it. Sometimes this results in a perfectly ripe, deliciously juicy snack. Sometimes I wait too long and only some of the mango is still good. So after cursing myself for being such a decadent flibbertigibbet that I can let perfectly good food go (at least partly) bad I remember vodka.
This is how I make mango infused vodka: A liberal sprinkle of self recrimination and what now?, half a mango, a cup of vodka, and two days.
If you are somewhere cold right now I apologize, it’s 86 degrees here today. I’ve got the tropics on the brain and the sun at my back.
The waiting is the hardest part.
Really want a hint of copper but don’t own a copper mug? Throw in an old penny (just, please, throughly wash it first)
Mango Mule Cocktail
makes 2 regular sized cocktails or one very big one
ingredients
- 4 ounces mango infused vodka (see above)
- A fresh lime- cut into quarters
- 1 12 ounce bottle of your favorite brand of ginger beer
- ice
- mango wedge for garnish (Most certainly optional)
instructions
- squeeze 2 quarters of the lime into a tall glass or copper mug
- add 2 ounces mango vodka
- add 6 ounces ginger beer
- top with ice
- garnish, repeat, and enjoy
