Just in case you are feeling snack food deprived and/or all this Super Bowl hype has left you with an unquenchable craving for all things Buffalo then these are the sliders that you’re looking for. They are saucy but, surprisingly, not sloppy and easily adaptable to personal preference: less blue cheese, more hot sauce, whole wheat or bleached flour, arugula or cabbage or iceberg. This is your party. Buffalo biscuit sliders with buttermilk blue cheese dressing for the win!

the ingredients delivered in a rambling fashion
for the biscuits-
I don’t follow a recipe for biscuits (would you like me to provide one? let me know. I do have a ‘master’ recipe of sorts) but I made this batch with whole wheat pastry flour similar to these but with buttermilk and (approximately) tripled. Or, of course, you can use your own favorite recipe.
I used a 2 1/4” round cutter, you could probably go smaller if you wanted bite sized but I wouldn’t go larger or you risk breakage.
for the buffalo sauce-
equal parts hot sauce (Franks or Texas Pete’s or Crystal) and unsalted butter, I would say that 3 Tbs of each should be enough for ten sliders but you know better than I how saucy you like things thus adjust accordingly.
or you could make this dipping sauce if you’re feeling fancy.
for the burgers-
one pound of ground meat- I used turkey but chicken or pork would also work. you don’t want to season it there is plenty going on here already- formed into ten patties just slightly larger than your biscuits (2 1/2 “ approx)
for the blue cheese sauce-
equal parts blue cheese, buttermilk, mayo, and yogurt or sour cream and a splash of lemon juice. 1/4 cup each plus a teaspoon of lemon if you want an actual amount. Like the buffalo sauce this could either be too much or not enough depending on preference, ideally you have just a liiiittle bit left over so you feel the abundance but not the indulgence.

- 1/4 cup louisiana style hot sauce
- 3 Tbsp unsalted butter
- 1 pound ground turkey
- 1/4 cup crumbled blue cheese
- 1/4 cup buttermilk
- 1/4 cup low fat yogurt ( I like the thinner european style from trader joes)
- 1/4 cup mayonnaise
- 1 tsp lemon juice
- 2 cups arugula roughly chopped
directions
- preheat the oven to 375F
- whisk together blue cheese, mayo, yogurt and lemon juice, set aside
- combine butter and hot sauce in an oven proof dish, place in oven to melt butter (about five minutes)
- slice the biscuits, form burger patties, chop arugula
- in a well oiled large oven proof skillet over medium high heat cook the burgers four at a time, after about four minutes when the first side is brown flip the burgers and spoon about a teaspoon of the buffalo sauce over each burger, cook for another 3 minutes or so then add four of the biscuits to the pan (It’s okay, desirable even for a bit of the spilled sauce to get on the biscuits) and place in the oven until the burgers are a safe temperature (165F) and the biscuits are warm
- assemble! biscuit bottom, bit of blue cheese sauce, arugula, burger, buffalo sauce, blue cheese sauce, biscuit top
- repeat
