This Easy Asparagus Flatbread, baked in a cast iron pan, is so simple and to the point delicious I hesitate to even call it a recipe. Cut it into tiny squares and serve this flatbread as an appetizer or do like I did and add an egg for an easy and complete meal. I used leftover dough that I had in the fridge which is how I imagine the store bought type would be. Because this is formed in the cast iron you can use a wetter dough if you prefer (or have no knead dough on hand).

Easy Asparagus Flatbread (in cast iron!)
Ingredients
- 8 ounces of pizza dough
- a handful of fresh asparagus washed and trimmed
- enough olive oil to lightly oil the pan and to drizzle over the asparagus
- parmesan or hard cheese of choice for grating
- fresh ground pepper and or pepper flakes
- an egg optional
Instructions
- pre-heat the oven to 475 degrees
- lightly oil a 10 1/2 inch (or larger) cast iron pan
- roll or press the dough into the pan (if it’s cold you might want to do this is stages, I usually do an initial pressing out and then prep the rest of the ingredients)
- lightly coat the top of the dough with olive oil and parmesan ( a little goat cheese at this point might be nice too, if you’re feeling fancy)
- press the asparagus stalks into the dough, add a bit more olive oil and parmesan.
- Bake on the middle rack for 10-12 minutes until bottom crust begins to brown- switch to a low broil (I do broil at 485F in my electric oven) until top crust and asparagus have just begun to brown (about 3-5 minutes in my oven)
- remove from oven add more cheese and a fried egg if you desire)
- serve hot (or at least warm)
