Allow peaches to sit out at room temperature for about ten or fifteen minutes so they are not rock hard but still frozen.
Combine half the peaches and all the other ingredients in a food processor or blender and process until smooth. Add the remaining peaches and process to desired consistency. (I like it to have enough intact pieces of peach to give you a bite of pure peach every third or fourth bite- is that inexact enough for you?)
Serve immediately or freeze in a well sealed container for up to a month
