Jalapeño Lime Simple Syrup: spice up tequila or spritzers
One jalapeno roughly choppedno stems- about eight pieces
One lime cut into quarters or eighths
One cup water
A pinch of salt
Combine all ingredients in a non reactive sauce pan.
Bring to a boil and then lower heat and simmer uncovered for another 45 minutes to an hour swirling or stirring occasionally
Allow to cool
Strain into a clean glass jar
Will keep in the refrigerator for several weeks
To make the Jalapeño Lime Tequila cocktail just shake one part simple syrup and two parts tequila of choice over ice with about a tablespoon of fresh squeezed lemon or lime juice (you could add a splash of orange liqueur as well to make it more of a margarita). Serve up or on the rocks with a lime garnish.
