Combine beans and water in a large pot, bring to a boil. Cook until tender, about an hour and a half. Adding more water if necessary. By the time the beans are tender there should still be about a quarter inch of water above the cooked beans in the pot.
Once the beans are tender but not squishy soft add the tomatoes and spices. Meanwhile in a large sauté pan cook the onion and garlic until soft, add the meat and cook, breaking down into bite-sized pieces until slightly browned. Add the ketchup. (I almost always shake some more ancho powder and cumin into the meat mixture)
Add the cooked meat and onions to the beans and allow to simmer for another 15-30 minutes before serving.
Garnish as desired. Serve hot.
