1cupsliced dried mushroomsslightly less than an ounce, I use as many as I can put in one batch of the spice grinder- shiitake or porcini
1/2cupdiamond kosher saltor to taste
1teaspoonred pepper flakesor to taste
1/2teaspoonground black pepperor to taste
Grind the mushrooms in a clean spice grinder (or small food processor) until they are a powder.
Add the powder to a bowl and then add the seasonings. I’ve found how much salt I want to add seems to vary so I usually start with a quarter cup and then work my way up if I’m feeling salty or not if I’m feeling ‘shroomy.
Toss to combine and store in a mason jar or other airtight container.
