Sipping on gin and juice takes on new meaning with this surprisingly delicious and simple winter warmer made with spiced apple cider and Pimms No 1.

Leftovers of a different sort, wherein I root through the liquor cabinet looking for something new and discover the Pimms (inherited Pimms actually, bought because of it’s visual similarity to Campari) languishing behind the Bourbon.

And a cocktail is born.

Pimms Hot Spiced Cider

Ingredients
  

  • 6 ounces spiced apple cider
  • 2 ounces Pimm's
  • an apple wedge or lemon zest

Instructions
 

  • Heat the cider
  • Add the Pimm's to a heat tolerant glass or mug
  • Top the Pimm's with the hot spiced cider
  • Garnish
  • Sip

The liquid swirls amber, refracts
the sun and turns the empty chair
beside me upside down, legs tilt
toward the sky and shorten
with each sip. Whorls of fingertips,
leave their marks on the glass,
like the furrows of a fresh-tilled garden
spied from the air. disappearing
between lips, the wine is cool and round
with sweetness, it dives deeper
with each swallow, taking on heat
as it tumbles to darkness.
What remains, the last shimmer, slips
down from the rim, shudders
as the glass lowers, slowly stills.
