It’s not even that warm today but just seeing temperatures above sixty in the forecast has me in a mad scramble for drinks laden with rum and blended with tropical fruit. Bring on the mango, the banana. I’m ready for sun naps and warm toes.

Even without the piña in this colada you run the very real risk of getting that song stuck in your head. For that I apologize.

I dislike most frozen drinks because they are too watery for my taste.  If I must blend, and sometimes you must blend, I prefer to either freeze most of the ingredients or blend and then serve over ice. So, for this colada you could either plan ahead and freeze the banana et all ahead of time or simply blend and serve over ice after the fact. I’ve got a low alcohol variation of the piña colada I intend to test this afternoon and the coconut cream and banana are freezing as I type.

ingredients

  • 1 smaller banana
  • 2 ounces of rum- either all light or half light and half dark
  • 4 ounces mango juice- I used the trader joe’s brand which is unsweetened and not from concentrate
  • 2 ounces coconut cream ( I buy the small tetra packs from the asian market rather than the sweetened stuff in the mixer section of your neighborhood market)
  • about 1 ounce of fresh grapefruit juice

instructions

  1. ideally freeze the ingredients ahead of time. I combine the rum, coconut, and mango for however many cocktails you’ll be making and then throw it in the freezer along with a few ripe unpeeled bananas. the bananas I bought were on the smaller side, you might only need half a banana if yours are large
  2. combine all the ingredients in a blender and blend until smooth
  3. garnish with a wedge of grapefruit
