A deliciously easy peachy frozen treat that comes together in minutes but can last in the freezer for weeks. The perfect fruity ending to a summer barbecue or a wonderfully cooling mid day treat.
Are you drowning in superlatives yet? ‘Cause I’m sorta hot and cranky and so it’s hard for me to get genuinely excited about anything but finishing off this peach granite is an excellent path to perky and each frozen bite makes the glowing heat of the laptop (so welcome in the winter months) at least bearable.
This is our weather for the next week. It looks almost exactly like the weather from last week. As I stare out at yet another sunny blue sky and sigh, I wonder how I ever managed to live in the southwest for as many years as I did. I like rain: how it smells and how it makes plants green and lush with no work on my part. This hot sunny thing makes me cranky, keeps me cooped up. At least there are peaches.
All the fruit is coming on hot and heavy. Right now at the farmers market you can get it all. Cherries, blueberries, raspberries, and peaches. Under normal weather conditions cherries and peaches do not co-exist, normally there are still strawberries. I was caught with peaches in the freezer from last season. Like all precious things I waver on when to use them- how do I know when the middle mark between the last peach of the fall and the first of the summer lies? That would be the best day. Today is a close second.
Easy and Refreshing Ginger Peach Granita
Ingredients
- 2 pounds of frozen peaches cut into bite sized pieces
- 2 ounces orange liqueur
- 4 ounces ginger simple syrup
- ½ tsp. ground cardamom
Directions
- Allow peaches to sit out at room temperature for about ten or fifteen minutes so they are not rock hard but still frozen.
- Combine half the peaches and all the other ingredients in a food processor or blender and process until smooth. Add the remaining peaches and process to desired consistency. (I like it to have enough intact pieces of peach to give you a bite of pure peach every third or fourth bite- is that inexact enough for you?)
- Serve immediately or freeze in a well sealed container for up to a month.
