The first Irish Coffee I ever had was in San Francisco. It might have been at the Buena Vista (t’was a long time ago) but if not it was certainly in the same small tulip glass, a perfect balance of cold cream and hot slightly sweet boozy coffee. That was how it should be. It was years before I realized that it not how it usually is. So I give you an Irish Coffee how I learned to love it

Traditional Irish Coffee
This Irish Coffee is very similar to the one made at The Buena Vista Cafe in San Francisco, unsweetened barely whipped cream, your favorite Irish Whiskey, and sweet hot hot coffee. It is sips that compliment and contrast.
Ingredients
- 1/2 ounce simple syrup
- 1 1/4 ounces Irish Whiskey
- 3-4 ounces hot coffee
- 1-2 Tbsps unsweetened whipped cream just barely whipped
Instructions
- Preheat a 6-ounce heat-proof glass
- Combine 1/2 ounce 1 to 1 simple syrup with 1 1/4 ounces of your favorite Irish Whiskey (you can gently heat this in a water bath if you want- but I usually just make a small batch of simple syrup just before so it’s still hot)
- Add the sweetened whiskey to preheated glass and top with about 3 ounces of hot coffee -leave a little less than an inch of space at the top so the cream doesn’t overflow. Stir gently and briefly to combine.
- Float a layer of unsweetened whipped cream (it should be just barely whipped, still soft enough to pour) over the top of the coffee by pouring it gently over the back of a spoon.
- Garnish with grated nutmeg if desired
- Sláinte
