The Pea Shooter- a low or no abv spring sipper

Pea shoots are awesome. I first discovered them in New York City where I would buy huge bags for a dollar or two and put them in everything, salads, stir fries, burritos. They last for weeks properly stored (by which I mean in a bag in the refrigerator ) and unlike other greens when one goes mushy you can easily just pull that one pea shoot gone bad out and the rest is still fine.

Turns out fresh pea shoots also work in simple syrup.

Add the simple syrup to fizzy water and you’ve got a house made fancy soda or gussy it up a bit and you’ve got a mocktail or no abv (that’s alcohol by volume) beverage.

Ingredients
  

  • 1 ounce pea shoot infused simple syrup Instructions follow
  • 6-8 drops of aromatic bitters I used Scrappys
  • Bubbly water to taste usually between 4-6 ounces
  • Ice
  • 1 good sized Lemon Zest

Instructions
 

to make the simple syrup

  • combine equal parts granulated sugar and water in a sauce pan (I Used 1/4 cup of each for approximately two drinks), bring to a soft boil and remove from heat. Stir in a handful of fresh pea shoots and infuse for 15 minutes or up to over night, remove the pea shoots and use the syrup immediately or cover and refrigerate up to a week

to make the pea shooter mocktail

  • combine simple syrup and bitters in a 10-12 ounce glass
  • add ice and bubbly water of choice, stir once or twice to combine
  • twist fresh lemon rind into glass, run the zest around the edge of the glass and add in
  • garnish with fresh pea shoots if desired

Notes

I used a lemon zest rather than the juice because I found the juice overwhelmed the subtle taste of the pea shoot simple syrup
aromatic bitters worked better than orange bitters imho to balance the drink- bitters do of course have alcohol in them so you can omit if you want something completely alcohol free
if on the other extreme you want more alcohol a london dry gin like bombay sapphire works well
