Rhubarb Recipe Round Up

Five of my favorite rhubarb recipes:

• a brand new one for pickled rhubarb so delightful in a quick salad
• a piquant cocktail made with rhubarb black pepper simple syrup (gin optional)
• rhubarb crumble- because rhubarb! and crumble 😉
• my favorite rhubarb jam, I make this every year- sometimes I omit the ginger if there is none on hand. So good on toast or yogurt
• rhubarb and strawberry upside down cake because the list seems incomplete without at least one strawberry rhubarb recipe, plus I’m still a little in love with how perfect that dollop of whipped cream in the photo turned out
• plus a bonus use (poptarts!) for my favorite rhubarb jam

pickled rhubarb & pickled celery w/ fennel

quick, slightly sweet, refrigerator pickled rhubarb, and celery with fennel make a refreshing crisp salad on their own or topped with a few goat cheese crumbles. Use the remaining pickles in egg salad (or pasta salad, or salad salad) or on a charcuterie board for a pop of color and flavor.

Rhubarb Upside Down Cake with fresh strawberries

A cooked in cast iron rhubarb upside down cake.

Adding the strawberries after the cake has cooked keeps the delicate berries fresh and adds a beautiful decorative touch to this classic(ish) upside down cake.
