Radish Pesto- one of many things you can make with radish greens

how a bunch of radish greens turned into two condiments and some flat bread

when I am very good I turn my fresh radish greens into a pesto or zippy chimichurri style sauce

when I am just good I do the  same only with slightly faded greens

when I am bad I let the greens languish and write about the times I was good instead,actually when I am bad I let the greens languish and binge watch a series I’ve already seen forgoing the writing entirely

things you can do with radish green pesto

  • toss with pasta, of course.
  • put it on a sandwich, I like it with chicken or turkey
  • use the remnants in the food processor to make a flat bread or tortillas, or add cream cheese or butter to the food processor and use the remnants to make a flavored butter or cream cheese.
  • almost all of the things I use my spicy lemon parsley sauce with

Radish Greens Pesto

a quick pesto sauce made in the food processor- a delicious way to use all the parts of the radish

Equipment

  • food processor

Ingredients
  

  • 2-4 cloves of garlic chopped
  • about a one inch chuck of Romano or Parmesan cheese coarsely chopped
  • a squeeze of fresh lemon juice optional but encouraged
  • one bunch of radish greens washed and coarsely chopped
  • several glugs of olive oil I add it one glug at a time until things look how I want them
  • salt to taste probably not more than a pinch or omit entirely

Instructions
 

  • put the garlic in the bowl of the food processor and pulse until mostly chopped
  • add the cheese and do it again
  • now add the greens and lemon juice and pulse another five or ten times
  • add the olive oil and pulse until desired consistency is reached, scraping the sides and adding more olive oil and a pinch of salt if necessary

    I’m trying this! Yum!! I love radishes! Sometimes basil is just too overpowering! This sounds fresh and delicious! Thanks, Melinda!

      🙂 I’m not a nut person (though pine nuts don’t count 😉 but pistachios are supposed to be quite nice with the radish greens
